    • Tips for enjoying DOVE Chocolate Discoveries’ Red Velvet Pancakes Mix (these tips are compiled from the experiences of Independent Chocolatiers. Results may vary depending on your cooking equipment.) Enjoy as Red Velvet Pancakes - Our Red Velvet Pancake mix has more sugar than the ordinary pancake mix. It is not necessary to cook in as hot a pan as ordinary pancakes. - The batter may come out thin like crepes. When mixing, use less liquid. Also, less batter is needed as they tend to expand. - Since the Red Velvet Pancakes do not bubble like ordinary pancake, lower the heat. - Instead of a typical pan, use a big flat griddle. If using an electric griddle, you may set it to 250-275°. - Try putting the pancakes on a cookie sheet and bake in the oven at 350° for approximately 5 minutes. They do not need to be flipped. Make sure the cookie sheet has edges so the pancakes do not spill over the sides. - Use a waffle-maker and turn your red velvet pancakes into waffles (same ingredients and use at room temperature). Be sure to spray your waffle iron with cooking spray, even if you’re using a nonstick surface. - As a special treat for Valentine’s Day, use a heart-shaped cookie cutter for heart-shaped pancakes. Enjoy as Red Velvet Cookies - To make red velvet cookies, use the entire bag of mix, 4 eggs, and 2/3 cup of oil. Drizzle with a cream cheese icing (cream cheese, confectionery sugar, and milk). Enjoy as Red Velvet Mini-Cupcakes - To make red velvet mini-cupcakes, use 1 cup of Red Velvet Pancake mix, 1 egg, 1/3 cup of milk, and 2 Tablespoons of melted butter. Mix together until smooth. Spray the pan with cooking spray. Bake at 350° for 10 minutes. Wait a few minutes and then remove cupcakes and put on a cooling rack. This recipe yields 24 mini-cupcakes. Enjoy as Red Velvet Crepes - To make red velvet crepes, use 1/2 cup plus 2 Tablespoons Red Velvet Pancake mix, 1 teaspoon Sugar, 1 teaspoon Salt, 1 cup of milk (whole or 2% are best), 4 eggs, 3 tablespoons of melted butter (for crepe pan/skillet). Mix all items (minus butter) until mixed/blended well and smooth. Please note that batter will be thin. Cover bowl and let sit in refrigerator for 1 hr. Use Crepe pan or regular small/medium skillet (about 8 or 9 inches). Heat pan on medium heat and coat with melted butter. Pour about 1/4 to 1/3 cup of batter in pan, roll around to evenly coat bottom and pour remaining crepes back into raw batter. Let cook for about a minute and then flip (this does take skill and there will be some wasted crepes, but those are good for tasting). Let cook for about 15 to 20 seconds and then flip out onto plate. Repeat for each crepe making sure the pan is coated with butter. Note that this is not the same technique as making pancakes.
